What Is Chungmu Gimbap? Korea’s Unfilled Rice Roll from Tongyeong
At first glance, Chungmu gimbap may look surprisingly plain. The small seaweed rolls contain only rice—no egg, vegetables, meat, or pickled radish. The flavor comes from the spicy side dishes served alongside them.
This simple arrangement makes Chungmu gimbap one of Korea’s most distinctive regional foods.
What Is Chungmu Gimbap?
Chungmu gimbap, or 충무김밥, consists of finger-sized rolls of rice wrapped in dried seaweed. Unlike regular gimbap, the rolls do not contain fillings. They are normally served with spicy squid salad and crunchy radish kimchi. Some versions also include seasoned fish cake.
The dish comes from the coastal city now known as Tongyeong in South Gyeongsang Province. Tongyeong was previously called Chungmu, which explains the food’s name.
Why Are the Ingredients Served Separately?
Chungmu gimbap is commonly associated with sailors, fishermen, and travelers around Tongyeong’s busy port.
According to the Korea Tourism Organization, the rice rolls and side dishes were separated to help the food remain fresh during trips at sea. Ordinary gimbap contains several moist ingredients that can spoil relatively quickly, especially in warm weather. Keeping the rice rolls simple and packing the strongly seasoned side dishes separately made the meal more practical to transport.
Historical accounts differ on precisely who created the first version. It is therefore safer to understand Chungmu gimbap as a regional food that developed around Tongyeong’s maritime culture rather than crediting one confirmed inventor.
How Is It Different from Regular Gimbap?
Regular gimbap commonly rolls rice together with ingredients such as egg, spinach, carrot, pickled radish, fish cake, tuna, or beef. Each slice contains the complete combination.
Chungmu gimbap works differently:
• The seaweed roll contains only rice.
• The rolls are smaller and are often eaten whole.
• Spicy squid, fish cake, and radish kimchi are served separately.
• Each bite can combine the mild rice with a different amount of spicy or crunchy accompaniment.
The plain roll is intentional. It balances the stronger seasoning of the side dishes.
What Does Chungmu Gimbap Taste Like?
The rice and seaweed are mild and savory. The accompanying squid salad is generally chewy, spicy, slightly sweet, and rich in seasoning. Radish kimchi contributes acidity and a crisp texture.

Chungmu gimbap remains closely associated with Tongyeong. The city’s Gangguan Port area is especially known for restaurants serving the dish.
Although it is now available elsewhere in Korea, eating it in Tongyeong provides a direct connection to the port culture from which it developed.

Ingredients vary by restaurant and recipe. Chungmu gimbap commonly contains or may come into contact with:
